Peppercorn Place Pumpkin Bread- a easy and delicious recipe from New Jersey

Pumpkin preparation - Can be done any time. Refrigerate or freeze prepared flesh. Defrost before baking. 
Wash pumpkin well and cut into segments. Microwave covered segments until flesh is cooked. Using tablespoon, separate flesh from skin. Discard skin. Mash flesh and leave to cool.

Ingredients - makes 2 loaves
Plain flour 14 oz
Baking soda 1 tsp
Salt                         ¾ tsp
Cinnamon         ½ tsp
Nutmeg          ¼ tsp
Sugar         12 oz
Eggs                    2
Water                  3 fl oz
Cooked Pumpkin  8 oz
Oil                  4 fl oz
Raisins, Nuts Optional

Method
Sift together dry ingredients. Make a well and add other ingredients. Mix thoroughly. Pour into greased, floured bread tins. Bake at 350 for 1 hour.

The baked bread freezes well once cool.
